Farmhouse Ale - Saison • Kansas City, MO • 8.5% ABV • 38.0 IBUA traditional Belgian-style farmhouse ale, the perfect combination of elements came together in their #7 fermenter. You could call it fate, but they called it Tank 7, and so it is. Beginning with a big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish.

Wheat Beer • Albuquerque, NM • 5.4% ABV • 15.0 IBUA traditional take on a Bavarian classic! Poured into a 23 oz. Hefe glass, this beer is served mit hefe with a voluminous white head. The aroma is everything we love in the style; clove, banana and vanilla. The body is rich and creamy, yet finishes fairly dry and is as refreshing as any beer you’ll drink here or anywhere else.

• Los Ranchos de Albuquerque, NM • 5.0% ABV • 25.0 IBUA light and dry, easy drinking Kölsch style ale brewed with German Pilsner malt, German hops, and fermented cool resulting in a clean, refreshing brew with a herbal, lemon hop character.
10 • RFA • Suicide Prevention Brett IPA
IPA - Brett/Sour • Santa Fe, NM • 7.0% ABV • 50.0 IBUOK so this is a bit of a long one, as we were invited to participate in a suicide prevention IPA month by our good friend Josh at OHSO in Gilbert back in 2021. Our brewer at the time, good old Mike Donovan, racked off a small amount of whatever Scully was in the tank at the time, and dosed it with some Brettanomyces Lochristi and a dry-hop charge of Eldorado hops. It was then covered up by some other tanks that got moved in front of it and forgotten. Recently, we decided to start cleaning up some old tanks, and found this lovely beer, which has now morphed into a delightful funky and sour beer that resembles nothing of the original beer. It may have started out as an IPA, but taste it for yourself, and I'm sure you'll agree it is nothing like it once was. You've gotta love the power of extended mixed fermentation/aging. Cheers!

Sour - Fruited Berliner • Santa Fe, NM • 5.0% ABV • 5.0 IBUWhen we brewed Chantal, it turned out we had some extra red raspberries left over, so we decided to use these by refermenting some Germophile on these raspberries. The result is this special one off beer that we will be pouring only in the tap room, and maybe at a special festival in the future. If you like it, tell your server and we might make some more. Sour - Blackberry Gose • Santa Fe, NM • 5.0% ABV • 5.0 IBUSlow Ready for This is a collaboration effort between our friends at Button Brew House in Tucson, and ourselves. It is brewed with a healthy charge of raw Sonoran white wheat from Marana, Arizona and fermented with a live lactobacillus culture. It is then refermented to dryness on a chef's kiss charge of blackberries. It took it's sweet time (that or we got sidetracked and didn't package it in a timely manner), but the beauty of live lacto fermentations using raw wheat is that the two coalesce and continue to co-evolve over time, yielding a beautiful marriage of flavors that you simply can't get with a short term kettle sour. Farmhouse Ale - Other • Santa Fe, NM • 7.0% ABV • 15.0 IBUStalker is our homage to the lovely biere de miel, and was brewed with our house mixed culture and a healthy dose of orange blossom honey. Sour - American Wild Ale • Fort Collins, CO • 6.9% ABV • 7.0 IBUFriek is an evolution, an imaginative amalgamation invented by our brewers. Multiple kriek Lambic style ales are fermented with wild yeast and tart cherries and then moved into oak barrels to age and sour taking on the cherry flavors. As the beer matures, framboises (raspberries) from Schroyer Family Farms in Fort Collins are handpicked and readied for the beer. The fresh raspberries are added immediately prior to the final blending. The sweet and tart flavors mingle on the tongue with a sparkling dry finish.

Saison • Leuze-en-Hainaut, Région Wallonne • 6.5% ABV • 30.0 IBUSaison Dupont is a world classic beer and the yardstick for one of Belgium’s most important beer styles. It is the most admired AND imitated Saison in the world. A strong, vital yeast is key to full attenuation and thus to the style. Saison Dupont is straw colored with a dense creamy head. The nose is alive, like fresh raised bread, estery with citrus and spice notes. Full-bodied and malty, it sparkles on the palate and finishes with a zesty hop and citrus attack. Incredibly compatible with food!

Lager • Santa Fe, NM • 5.0% ABV • 25.0 IBUBrigitte was a kind woman from Brugge that reminded us that there are still kind people in the world. She wasn't into sours, and really only liked drinking lagers, so we decided to make a Belgian-style lager in her honor. We know this isn't really a thing, but why not? Thanks for the enlightenment, Brigitte! This second batch was dry-hopped with the lovely Mandarina Bavaria hops, which present a soft tangerine note in the finish. Cheers!

We weren't happy with the initial batch, as the so we dialed in the recipe with lessons learned from the first brew, then racked the beer into freshly dumped sauvignon blanc barriques back in April of '22. The resulting saison is quite exquisite! We took an aliquot of this lovely base then aged it on organic Montmorency cherries that we picked off our own trees last summer. To call our humble little lot an estate is a stretch, but it sounds good doesn't it? Cheers!

Still Honey Saison • Santa Fe, NM • 0.0% ABV • 0.0 IBUThe Best Part is a mixed fermentation honey-rich saison brewed with our besties at Superstition Meadery, and the late great Mark Dawson. This beer was mashed with a large bolus of oranges in the mash, then fermented with our house mixed culture on a heavy dose of orange blossom honey, and then aged for an extended period in the exact rum then melomel barrels we used at Superstition for the 10th anniversary collaboration we did with them awhile back. God damn you Mark! We miss you my man. Drink some mead in Valhalla for us!

Berliner Weisse • Santa Fe, NM • 5.0% ABV • 5.0 IBUGermophile celebrates our love for souring bacteria, specifically Lactobacillus in this case. It is our core Berlin-Style Weissbier, and is brewed with a 50/50 blend of continental pilsner malt and malted white wheat, and is soured with Lactobacillus. We then finish the beer with a neutral ale yeast, resulting in a dry and tart refreshing beer. This beer won silver at the 2018 GABF in the Berliner-Style Weisse category, which we were very proud of. Prosit!

American Wild Ale with Tea • Santa Fe, NM • 5.0% ABV • 15.0 IBUWhen tea is consumed in many cultures, there is a distinct ceremonial aspect to the event. We wanted to celebrate this act of ceremony with a mixed fermentation saison brewed with a portion of rice in the grain bill, that was then dry-hopped with a unique tea blend. For this beer, we used Boulder Blues from the Tea Spot in Boulder, Colorado. This handcrafted blend combines tea fine Japanese Sencha and Chinese Dragonwell for a smooth base with wild strawberries and rhubarb flavors for a subtle twist. Luxurious aroma and brisk, vivid flavor. Smooth like the blues. This brew was made in collaboration with the fine folks at Fermly Craft Beer Laboratory, who are a fantastic resource for all your analysis needs. We hope you dig it as much as we did making it. Berliner - Mourvèdre Must • Santa Fe, NM • 5.5% ABV • 5.0 IBUIf You Must is a live lactobacillus Berlin-style weissbier that we brewed with raw Sonoran white wheat, then aged in Tablas Creek Esprit de Tablas Blanc barriques on fresh Mourvèdre must for an extended period of time. The resulting oenobeer is has subtle notes of grape skin tannins, oak-derived vanillan, a refreshing tartness, and a dry crisp finish. Special thanks to Tablas Creek Winery for working with us on this special project! We hope you like this as much as we did making it. Cheers!

Sour - Fruited Gose • Santa Fe, NM • 4.7% ABV • 5.0 IBUMountain of Light is our foeder-fermented and bulk aged gose-style wheat beer. It is brewed with a large percentage of Mecca Grade Shaniko, Alvarado, and Wickiup wheats, along with Weyermann Extra Pale Pils basemalt. We sour the beer with our house lactobacillus strain, then ferment it using a healthy pitch of Dupont yeast. It then sees the resident house mixed culture embedded in our foeder wood interstices and is allowed to meld into a finished product over an extended period of time. It features a light touch salinity from Pacific sea salt added to the mash, lemony sourness from the lactobacillus fermentation, and a light touch of funk from the wood contact. It's light but complex, and ultimately refreshing. To this specific beer, we added a bunch of passionfruit. This is a super limited batch and was bottled in 750's because of its' limited nature. We then rack the beer onto a healthy charge of Grüner Veltliner lees from our good friends at Vivac Winery up in Dixon. After an extended aging period on these lees, we then bottled this beer with Alfalfa honey. The result is a crisp and funky sour ale that is best enjoyed with a big chunk of soft rind cheese and good friends. Cheers! Lastly, some details: pH = 3.34, TA = 12.9 g/L

True to Caricature is a beer that was co-fermented using both of our house mixed cultures in stainless steel, then gently aged in Santa Fe Spirits Atapino casks, along with Atapino-soaked piñon nuts. It exhibits a bright lemon acidity on the front of the palate, followed by delicate notes of pine and a creamy vanilla note in the finish. Special thanks to the amazing Em Sauter (@pintsandpanels) for the fun caricature! Cheers!
